Strawberry Rolls with Vanilla Glaze Recipe

Prep time: 30 minutes • Total time: 2 hours, 25 minutes • Makes: 10–11 rolls

Filling
1 1/2 cups (190g) finely chopped strawberries
1/3 cup (70g) granulated sugar
1 1/2 tbsp cornstarch

Dough
2 3/4 cups (345g) all-purpose flour, plus extra for dusting
3 tbsp granulated sugar
1 tsp salt
2 1/4 tsp instant dry yeast (1 standard packet)
1/2 cup (120ml) water
1/4 cup (60ml) milk
2 1/2 tbsp (40g) butter
1 egg

Glaze
1 cup (120g) confectioners' sugar
1 tsp vanilla extract
2 tbsp (30ml) heavy cream or milk

1. Make the filling: Warm the diced strawberries in a small saucepan over a medium heat. Stir constantly for 4 minutes until the strawberry juices have been released. Add the granulated sugar and cornstarch and continue to stir for another 2 minutes. The mixture will thicken. Remove from the heat and chill until ready to use. The filling must be very cold.

2. Make the dough: In a large bowl, toss 2 1/4 cups flour, the granulated sugar, salt, and yeast together until evenly dispersed. Set aside.

3. Heat the water, milk, and butter together in the microwave until the butter is melted and the mixture is hot to touch—about 125-130 degrees F. Stir the butter mixture into the flour mixture. Add the egg and add at least 1/3 cup of additional flour to make a soft dough. You may need up to 1/2 cup if your dough is too wet. The dough will be ready when it gently pulls away from the side of the bowl and has an elastic consistency.

4. On a lightly floured work surface, knead the dough for 3 minutes. Lightly spray a bowl with non-stick spray and set the dough inside. Let rest for 10 minutes.

5. After 10 minutes, roll the dough out into a 14 x 8in rectangle. Spread the strawberry filling on top. Roll up the dough tightly along the long edge. Cut into 10-11 even pieces and arrange them in a lightly greased, 9-in, round or square pan. Loosely cover the rolls with aluminum foil and allow to rise in a warm, draft-free place for 1-1 1/2 hours. **

6. After the rolls have doubled in size, preheat the oven to 375 degrees F. Bake for 25–30 minutes until lightly browned. After 15 minutes, rotate the pan in the oven and loosely cover the rolls with aluminum foil to avoid heavy browning.

7. Make the glaze: Mix the confectioners’ sugar, vanilla, and cream together until smooth and drizzle over the rolls immediately before serving. These rolls taste best served on the same day. Unglazed rolls may be frozen for up to 2 months.

** Sally Has Included This Note: The rolls must rise in a warm environment. When it’s time for rising, I preheat the oven to 200 degrees F. Then I turn the oven off and place the rolls inside. After 1–1 1/2 hours, the rolls will be puffy and ready to bake. To make the night before, simply cover the rolls and allow to rise. Then leave out at room temperature until they’re ready to bake in the morning.
Strawberry Bridal Shower Ideas

​Strawberries are on my mind a lot lately, not only because my daughter loves them and I recently made pancakes for dinner that were topped with the red berries, but because my strawberry bridal shower invitations in my etsy shop have been a hit recently. Just this weekend I finished off two orders for upcoming strawberry themed bridal showers that will be using my invitations to announce the special day. And, this week, I'll be working on strawberry cupcake toppers to finish up another order.

So, since I've been seeing lots of strawberries lately, I thought I should put together a strawberry bridal shower inspiration board. Of course, a strawberry themed wedding would be equally amazing. After all - the bride and groom are "berry sweet together".

Berrylicious Recipes for the Summer with Blueberries + Strawberries

With August here already, I wanted to share with you some yummy summer treats to end the week with. Last week I was so honored when Driscoll's shared my blueberry inspiration board with their twitter followers. I even had a container of their strawberries in my fridge at the time :) On their web site, they have so much inspiration from recipes to berry wedding décor. Today, I've rounded up just a few recipes from the Driscoll's site that incorporate blueberries and/or strawberries. They'd be the perfect sweet treat for any summer party you may have planned. I'm hoping to be able to make a few of these myself very soon, although for the ice cream I guess I would first need an ice cream maker, right? Photo Shoot : whimsical and eclectic summertime inspiration

I've got a fun way to end the week today and it's with a fun little photo shoot that incorporates so much of what we love about summer - lemonade, mason jars, strawberries, and dining on the porch. Paige of Paige Hiller Photography and Carey of Lasso’d Moon utilized space at the Blue Horse Inn in Woodstock, VT to put together a shoot that was whimsical and eclectic with a bright summer-y feel.

Weddings, Tents and Events supplied the gorgeous turquoise blue ruffled tablecloths, as well as the glassware. Don't you just love this linen? It reminds me of the pool.

For the table settings, Carey and Paige utilized what they had in our own china cabinets . . . Carey provided the pretty scrolling white dinner plates and the smaller dessert plates, and the tea cups were from Paige’s personal collection.

Jenna of Piper Designs lent her styling to putting the flowers and other items together into a cohesive look. For the flowers, the team chose to go with carefree yellow bouquets in blue mason jars and incorporated natural elements into the decor, like fresh lemons and strawberries.

For the stationery, the place cards, lemonade sign and invitation featured custom calligraphy and fun stripes in shades of yellow.

Photo Shoot : a summery strawberry & lemonade vintage wedding

Today I have a special photo shoot to share with you - recently Sarah from Deeds and Petunia wrote to me asking if I would provide my Strawberry invitation, recipe cards and a garland that read "Just Married" for a photo shoot. The shoot was planned as a feature in her brand new "It's all in the Details . . ." an online magazine for a handmade wedding which published yesterday. I of course said yes and was honored to be able to participate as many of you know how much I love strawberries {remember my very first photo shoot last year?} I am in love with this strawberry and lemonade shoot that was photographed by Rosemary Wagner Photography. The colors are bright and cheery and it's definitely a party I'd want to be invited to. Oh, and my DIY for the strawberry jam favor labels can be found in the ezine so please be sure to check it out :) And, my garland is part of the giveaway Sarah has put together so it could be yours!!!!
